Unsalted Butter, cold

Sharp Cheddar, grated

Egg

Buttermilk

Directions

Pre-heat oven to 375°F

Lightly grease 8 inch square or 9 inch round baking pan.

In a large bowl whisk together the flour, baking soda, baking powder and salt.

Work in the butter. Toss in the cheese.

Mix the egg and the buttermilk together and then add the dry ingredients. .Mix until moist.

Scrape mixture into prepared baking pan, using wet fingers to spread mix to the edge of the pan.

Bake 40-45 min until toothpick test comes clean or internal center is 200°F.

Remove bread from oven, loosen edges with table knife or spatula. Let stand 5 minutes, cooling on a wire rack. Serve warm or cool.

Optional additions: 1 can creamed corn or 1 C thawed frozen or fresh corn, 1 small can of diced green chilies. Sauteed onions and or mushrooms.

Enjoy with homemade split pea or bean soup. Yumm
