Dark Brown Sugar

chopped Suet (I made my own 1½ lbs beef fat rendered + ¼ c bacon drippings),

Ground Cloves (grind your own fresh)

Nutmeg, fresh ground

grated Lemon Rind (zest)

Vinegar

Apple Cider (Honey Crisp apples or Criterion)

Directions

Put tomatoes and apples through a food chopper, add salt and let stand for an hour. Then drain.

Barely cover with water and cook 5 minutes over moderate heat. Drain.

Add remaining ingredients, blending thoroughly. Bring mixture to a boil, then simmer an hour, stirring frequently.

Pour into hot sterilized jars prepared for canning. Place in a boiling water bath for 25 minutes.
