Shrimp are a great low-fat, protein-rich delicacy with a touch of omega-3 fatty acids. Mix them up with the monounsaturated fats found in avocados and olive oil for a power lunch.

Ingredients  
1 lbs    Medium shrimp, peeled and deveined  
1 T    Lime zest  
6 T    Lime juice, fresh and divided  
2 t    Cumin, divided  
  Sea Salt  
  Pepper, fresh ground  
1/8 t    Cayenne pepper  
1 lbs    Ripe tomatoes cut into " chunks  
  Red onion, chopped  
  Cilantro, fresh and chopped  
3 T    Olives, stuffed and chopped  
2 T    Olive oil  
1   Avacado, ripe and pitted, peeled, and cut into chunks  
4 c    Mixed salad greens  
 
1 Place the shrimp in a medium bowl and add the lime zest, 3 tablespoon lime juice, teaspoon ground cumin, teaspoon sea salt, black pepper, and cayenne. Mix well, cover, and set aside while preparing the salad.
2 In another medium bowl, combine the tomatoes, onion, cup cilantro, olives, oil, and the remaining 3 tablespoons lime juice, teaspoon cumin, and teaspoon salt. Mix well. Let stand for 10 to 15 minutes to blend the flavors. Add the avocado and mix gently.
3 Place the greens in a large shallow bowl and mound the avocado mixture in the center.
4 Spray a medium nonstick skillet with cooking spray. Warm over medium-high heat. Add the shrimp and cook, turning often, for about 4 minutes, or until just opaque in the thickest part.
5 Add the shrimp and any pan juices to the salad and sprinkle with the remaining 2 tablespoons cilantro. Serve immediately.
