Potatoes, mashed and warm. Not flavored

Cocoa

Buttermilk

Pre-heat oven to 350°F

Cream the shortening and the sugar. Add the eggs and beat until light and fluffy.

Combine the flour, cocoa and baking soda. Stir the potatoes into the sugar mixture. Add the flour mixture alternately with the buttermilk, starting and ending with the dry ingredients.

Pour the batter into a greased and floured 9"x13" pan. Bake at 350° F for 35-45 minutes until a toothpick inserted in the middle of cake comes out clean.

Remove from oven and let cool for 20 minutes. Cut into squares and remove from pan. When serving, dust with powdered sugar.
