Recipe Name: Spicy Cheese Ball
Serves: 15    Prep Time: 1 hour Oven Temp: 350ºF    Oven Time: 25 min
Ingredients:
3 c Bisquick
2 c Cheese, grated
1# Sausage
1 lg Onion minced
½# Mushrooms finely chopped

Mix all ingredients together into balls about walnut size. Bake in a 350ºF oven for 25 minutes. Serve hot.

Recipe Name: Louie´s Chipped Beef Dip

Ingredients:
2½ oz Chipped beef
8 oz Cream cheese
½ c Sour cream
½ c Green pepper, chopped
1 bunch Onions, green

Chop chipped beef into fine pieces in a food processor or blender. Mix cream cheese, sour cream, chipped beef and green pepper. Put in a shallow baking dish and bake for 25 minutes at 350ºF. Chop green onions, including the green tips. Sprinkle over the hot dip. Serve with crackers.

Ingredients:
1 sm Onion
1 Stick butter
1 pkg Broccoli, chopped
1 can Cream of mushroom soup
1 sm can Mushrooms
1 roll nippy cheese
¼ t Garlic powder
3 shakes Tabasco
½ c Almonds, slivered

Sauté onions in butter. Put all other ingredients in pan. Simmer until thickened. Serve with toast squares or Melba toast.

Recipe Name: Sugar ´N Spice Almonds
Yield: 3 cups

Ingredients :
1/3 c Sugar
1 t Cinnamon
½ t Cloves, ground
1 Egg white
1 T Dry or cream sherry
3 c Almonds, whole
1 T Orange peel, grated

Preheat oven to 350°F. In small bowl, combine sugar, cinnamon and cloves; set aside. In large bowl beat egg white and sherry just until frothy and opaque. Add almonds. Toss to coat evenly. Add sugar mixture and orange peel. Toss to coat evenly. Arrange on greased baking sheet in single layer. Bake 15 minutes. Stir gently. Arrange again in single layer. Bake 15 minutes longer. Turn off oven and leave in oven for 20 minutes. Remove from oven. Cool completely.

Ingredients:
1 can Crabmeat OR 1 fresh Blue crab
4 Onions, green chopped fine
8 oz Swiss cheese, grated
1 pkg Butterflake rolls (separate into 36)
¼ t Curry
½ c Mayonnaise
Sliced water chestnuts

Mix crab, onion, curry, mayonnaise and cheese. Divide the ingredients among 36 sections of rolls. Top them with water chestnuts. Bake on a cookie sheet 18 minutes at 450°F.

Ok ... I just had to add some great salsa recipes to this collection. I never knew Mom to make salsa.
Ingredients:
3# Fresh tomatoes OR
28 oz can Tomatoes, diced

2 - 10oz can Tomatoes w/ green chilies
¼ t Garlic, powder OR
2 cloves Garlic, fresh
½ sm Lime, squeezed
½ t Chili powder
½ sm Onion
1 T Cilantro, dry

In a food processor, add all except about 1 ¼# of tomatoes. (If using canned - hold the 2 10oz cans of tomatoes w/green chilies) Process about 4 min to form a base. Pour this into a large jar. Place in the processor the remainder of the fresh tomatoes and process for the count of 3 - 6 (the lower count will give you a thicker sauce). (If using canned, use the tomatoes w/green chilies) Pour this into the jar with the base. Process the onion until chunky. Add to the jar and mix well.

I just had to add this one. This might be a little more spicy than the previous recipe. Adjust the peppers if you want - omit the red Italian sweet. This salsa really lends itself to modifications.

Ingredients:
5# Tomatoes
1 lg Spanish onion
5 Tomatillas
1 Italian sweet pepper, green
1 Italian sweet pepper, red (for hotter salsa)
5½ oz Tomato paste
¾ c Vinegar
¼ c Sugar, brown
1 T Salt
1 t Cilantro

Blanch and peel the tomatoes, then dice them. Small dice other ingredients. Slow boil all the ingredients for 1 hour, stirring to prevent scorching. Pour into canning jars and seal.

Recipe Name: Smoky Roasted Salsa

Really a very good salsa!
Ingredients:
6 Garlic cloves
2 med Onion, quartered
8 lg Tomatoes
8 Tomatillos, husk removed.
½ c Cilantro leaves, fresh
2 Peppers, sweet
½ c Lime juice
4 T Olive oil
Hot peppers

You can use any kind/number of hot pepper you want. (I used 1 and it is mild) Place a 10 - 12" uncoated fry pan over high heat. Add garlic, onion, halved Tomatillos, hot peppers, sweet peppers and tomatoes. Cook turning often with tongs until charred on all sides (about 10 minutes). Remove and let cool. Cut tomatoes in half. In a blender or food processor, combine vegetables, oil, lime juice and cilantro. Whirl to desired consistency. Chill and serve with chips.

Recipe Name: Crab Stuffed Mushrooms

Ingredients:
1# Crab meat
24 Mushrooms, fresh
½ c Mushroom stems, chopped
2 T Butter, softened
1 egg, beaten
2 T Parsley, chopped
½ t Salt
¼ t Garlic, minced
2 T Parmesan cheese, grated

De-stem the mushrooms. Set aside. Chop the stems into small pieces. Mix all ingredients, except the mushroom caps, until the mixture balls together. Place the mushroom caps on a lightly greased cookie sheet. Fill each mushroom cap with the mixture. Place in a pre-heated oven at 400ºF. Cook for 12 - 15 minutes until just browned. Serve hot.

Recipe Name: Cheese Ring

Ingredients:
1 pkg (16 oz) Extra sharp Cheddar shredded
1 pkg (16 oz) medium Cheddar
1 sm Onion, grated
1 c Mayonnaise
1 t Red pepper
1 c Pecans, chopped
Parsley sprigs

Combine first 5 ingredients and mix well. Sprinkle about ¼ cup pecans in an oiled 7-cup ring mold and press cheese mixture into mold. Chill until firm. Unmold onto a platter and pat remaining pecans onto cheese ring. Garnish with parsley sprigs.

Recipe Name: Deviled Crabmeat Paté

½# Crabmeat, cooked and shredded
1 T Scallions, chopped
1 t Mustard, prepared
½ t Lemon juice
½ t Mustard, dry
¼ t Salt
4 drops Tabasco

Combine all ingredients in a bowl. Form into a ball. Place on a bed of lettuce and serve.

Recipe Name: Champagne Punch

Ingredients:
1 bottle Sauterne, chilled
1 c Cognac
2 Oranges, juiced (save juice)
2 Lemons, juiced, (save juice)
1/3 c Sugar
3 bottles Champagne, chilled
1 pt Strawberries, hulled and halved
1 Lemon sliced
1 Orange sliced

Combine sauterne, cognac, orange and lemon juice and sugar in a 6 quart punch bowl. Stir until sugar dissolves. Just before serving, slowly stir in champagne. Add ice cubes, strawberry halves, lemon and orange slices.

Now just stop a minute! Can you imagine the party we could have with the Crabmeat Stuffed Mushrooms and the above Champagne Punch? I remember that punch. We could sample in the kitchen, but not in public.

1# Crab meat
1 bottle Chili Sauce
½ bottle Kraft Casino Salad Dressing (No other!)

8 oz Cream cheese
1 c Cheddar cheese
4 T Sherry
1 t Curry (powder)
Chutney
Bacon (crumbled)
Green onions

Fry the bacon crisp. Crumble. Dice the green onions in circles. Combine the first 4 ingredients until mixed. On a platter, spread the cheese mixture. Sprinkle the crumbled bacon, then spread the chutney and sprinkle the onion rings on the top. Serve slightly chilled.

Ingredients:
1# Backfin crabmeat
1 T Horseradish
½ bottle capers, drained
1 t Lemon rind, grated
½ Lemon juiced
Dash Tabasco
1 c Mayonnaise
¾ c Sharp cheese, grated

Mix all except the cheese. Spread in a 10" pie plate and top with the cheese. Bake 20 - 25 minutes at 350ºF. You may also add grated green onions, Worcestershire sauce or garlic.

Recipe Name: Champagne Cheese Ball
Serves:    Prep Time: 3+ hours
Ingredients:
½# Sharp cheddar cheese, grated
2 T Butter
6 oz Cream cheese, softened
½ c Champagne
¼ c Onion, chopped
1 Garlic clove, minced
1 t Worcestershire sauce
1 t Salt
Topping -
1¼ c Walnuts, chopped
1 T Parsley, chopped
1 t Chili powder
1 t Curry powder
1 t Dill

In a bowl, combine the first 3 ingredients until thoroughly mixed. Gradually add champagne, stirring all the while. Stir in onions, garlic, Worcestershire, and salt. Cover and chill 1 hour. On a sheet of waxed paper, form the mixture into a ball. In a small dish combine the topping ingredients. Spread on waxed paper and roll the mixture. Chill for 3 hours or until ready to serve.

Recipe Name: Curried Cheese Dip

Ingredients:
8 oz Cream cheese
2 T Milk
½ c Sour cream
2½ oz Dried beef, chopped
2 T Onion, chopped
2 T Green pepper, chopped
1/8 t Black pepper,ground
½ t Curry powder
1/3 c Pecans (or Walnuts) chopped

Blend cream cheese with the milk. Add sour cream. Blend until smooth. Add chopped dried beef, onion, green pepper, curry powder and black pepper. Beat at low speed until smooth. Spoon mixture into a small, shallow baking dish. Sprinkle with chopped nuts. Refrigerate until serving time. Uncover and heat for 20 minutes at 350ºF. Serve as a vegetable dip.

2 T Horseradish sauce, Kraft
2 T Mayonnaise
Crab meat (Judge amount - should be predominantly crab.)

Mix the first 3 ingredients until smooth. Fold in the crab meat. Refrigerate for at least 2 hours.

2 cans Chili con carne (no beans)
2# Velveeta cheese
2 Peppers, green chopped fine
2 Onions, chopped
Dash garlic salt

Place all ingredients in a sauce pan (or fondue dish) and let cook as log as you want. The more you cook this, the thicker it gets.

Ingredients:
8 oz Cream cheese
1 c Cheddar cheese, shredded
½ c Bleu cheese, crumbled
1 T Worcestershire sauce
¼ c Onion, minced
1 t Parsley, chopped
Strips of pimento

In a small bowl, blend first 5 ingredients until smooth. Roll into a ball and garnish with pimento and parsley.

In a bowl, mix all ingredients, except almonds, thoroughly. Place in a shallow casserole dish and spread evenly. Bake at 375ºF for 15 minutes. Serve hot.

Eggplant Caviar
Serves:    Prep Time: 3 hours
Ingredients:
1 sm Eggplant
2 sm Tomatoes
1 sm Onion, minced
1 clove Garlic, minced
1 T Olive oil
½ t Basil
½ t Thyme
½ c Tomato sauce

Peel eggplant and slice. Salt the slices and let drain on paper towel for 30 minutes, then chop. Heat olive oil in a skillet. Add diced onions and minced garlic. Sauté over medium low heat until onions are limp. Add tomatoes, eggplant, basil, and thyme. Sauté 5 - 1- minutes, or until eggplant is limp. Add tomato sauce and simmer for 30 minutes. The mixture should become very thick. Cool and refrigerate at least 2 hours. Serve as a spread with toast points or party rye bread.

Recipe Name: Liver Paté

Ingredients:
¾ c Butter
1# Chicken liver
2 Garlic cloves, minced
1 Onion, chopped
¼# Mushrooms, chopped
½ t Salt
1½ t Worcestershire sauce
¼ t Pepper
¼ t Nutmeg
1/3 c Sherry, dry

In a frying pan melt the butter and sauté the chicken livers and the garlic until the liver looses its pink color. Remove from pan and put in blender. Put the rest of the ingredients in the frying pan and sauté until onion is translucent. Add this mix to the liver and blend until smooth. Keep well covered and refrigerate for 24 hours. When serving cover with chopped green onions or paprika.

1 c Orville Redenbacher´s Popcorn oil/batter
½ t Dillweed
½ t Lemon pepper
½ t Garlic powder
1 pkg Hidden Valley Ranch salad dressing mix

Mix all ingredients in a large bowl and add 2 boxes of Nabisco Oyster Crackers. Toss well. Store in a sealed can or jar.

Recipe Name: Mushroom Paté

Ingredients:
1# Mushrooms, chopped
2 T Butter, melted
1 pkg Cream cheese (8 oz)
½ t Garlic salt
1 t Seasoned pepper

Sauté the mushrooms in butter in a skillet over med-high heat. Cool to room temperature. Position knife blade in a food processor bowl. Add mushrooms, cream cheese, salt and pepper. Process until smooth. Place mixture in a mold. Chill.

Ingredients:
2# Mushrooms, small
2 T Olive oil
2 T Wine vinegar
¼ c Tomato juice
½ t Salt
½ t Paprika
1 clove Garlic, minced

Mix the olive oil, vinegar, tomato juice, salt, paprika and garlic. Place the mushrooms in a large jar and pour marinate over the mushrooms. Let the mushrooms marinate for 2 or 3 days before using.

4 oz Jamaica Rum
4 oz Lemon juice
8 oz Pineapple juice
8 oz Grapefruit juice

Recipe Name: Miniature Quiche

Party Shells
½ c Butter, softened
3 oz Cream cheese, softened
1 c Flour, unsifted
Filling
1 lg Egg, slightly beaten
½ c Milk
¼ t Salt
1 c Swiss cheese, grated
Bacon pieces
1 sm Onion, chopped

Party shells
Mix together butter and cream cheese. Work in the flour. Chill the mixture if soft. Roll into 24 balls and press into tiny muffin tins.
Filling
Combine egg, milk and salt. Set aside. Mix the cheese, onion and bacon bits. Fill pastry shells with the cheese mixture. Dribble a good amount of the egg mixture over the cheese mixture. Bake at 350°F for 30 min. Serve warm. (Can be made ahead of time and kept in a freezer until ready to cook.)

3 Bacon pieces
1 Avocado, mashed
1 Tomato, chopped
1 Onion, chopped
1 Green pepper
1 T Lemon juice

Fry and crumble bacon. Add all to food processor and process until smooth. Serve with chips.

Ingredients:
2 cans Shrimp, small
1 can Tomato soup
8 oz Cream cheese
2 T Knox gelatin
1/3 c Green pepper, chopped
1/3 c Celery, diced
1 c Mayonnaise
1/3 c Onion, chopped

Heat undiluted soup and cream cheese until blended. Dissolve the gelatin in the shrimp juice. Add to the soup mixture and mix thoroughly. Add all remaining ingredients and mix well. Pour into a mold and chill.

Yield: 3 cups

Ingredients:
10 pkg frozen Spinach, chopped
1½ c Sour cream
1 c Mayonnaise
1 pkg Knorr Vegetable Soup Mix
8 oz Water chestnuts, chopped fine
3 Green onions, chopped fine

Squeeze spinach until dry. In a medium bowl, stir together spinach, sour cream, mayonnaise, soup mix, water chestnuts and green onions. Cover and refrigerate 2 hours. Stir before serving. Serve with pumpernickel bread.

Recipe Name: Hot Spinach Balls

Ingredients:
2 10-oz pkgs Frozen spinach, chopped
2 c Herb stuffing (Pepperidge Farms)
1 lg Onion, diced
4 Eggs
Salt and Pepper
½ c Parmesan cheese
¾ c Butter, melted
1½ t Thyme
1 clove Garlic, minced

Cook spinach and drain to dry. Mix all ingredients together well. Chill 2 hours and then roll into balls 1" in diameter. Freeze or refrigerate until ready to use. Bake about 30 minutes at 300°F in a single layer tray.

Some of these appetizers are incredible uses of vegetables and cream cheese. The cream cheese seems to be a re-occurring theme in some of Mom´s treats. But then, suddenly, frozen spinach appears.


Recipe Name: Tomato Juice Cocktail
Serves: 20   Prep Time: 1 hour

Ingredients:
8# Tomatoes, fresh
1 c Celery, chopped
½ c Onion, chopped
¼ c Lemon juice
1 T Sugar
2 t Salt
2 t Worcestershire sauce
2 t Horseradish, prepared
½ t Hot pepper sauce (Tobasco?)

Wash tomatoes and remove stems and core. Cut tomatoes to measure 5 quarts. In a large kettle, combine tomatoes, celery and onion. Cover and cook slowly until tomatoes are soft. Stir the kettle often. Press tomato mixture through a food mill to extract the juice. Boil gently uncovered about 30 minutes, stirring often. Add lemon juice, sugar, salt, horseradish, Worcestershire sauce and pepper sauce and simmer 10 minutes. Put it in freezer to quickly cool, but don't freeze.

3 ripe Avocados, mashed
2 T Lemon juice
1 clove Garlic, minced
1 Onion, red and chopped
Salsa

Assemble on a large platter in the ingredients list order.

15 oz Salmon, cooked and flaked
8 oz Cream cheese, softened
2 T Horseradish - to taste
2 cloves Garlic, minced

1 Lemon, juiced

Mix all ingredients and form into balls or rectangle. Garnish with chopped parsley. Serve with wheat thins. May be frozen.

Recipe Name: Zucchini Snackers

Ingredients:
3 c Zucchini, coarsely grated
1 c Biscuit mix
4 Eggs
½ c Green onion,sliced
½ c Parmesan cheese, grated
½ c Olive oil
½ t Italian seasoning
¼ t Garlic powder
Dash Tobasco
2 T parsley or watercress, chopped
¼ t Salt
½ t Pepper, seasoned

Sprinkle salt over zucchini and let stand for 1 hour. Squeeze liquid from zucchini and place in a bowl. Add remaining ingredients and mix completely. Place in a 13 x 9 baking dish and place in a 350°F oven for 25 minutes. Cool 5 minutes and cut into 2" squares and then diagonally. Enjoy! Its different.

Recipe Name: Tomatillo Salsa with Red Tomatoes and Zucchini

Here is a great salsa that is easy to make, doesn't take a lot of time and is a way to use some of those zucchini. Enjoy this and its only as spicy as you want to make it. This comes from the 19th Street Gardners.
Ingredients:
1# Tomatillos, about 6 medium
2# Tomatoes, fresh ones, red
1# Tomatoes, fresh ones, yellow
1 med Sweet red bell pepper, diced
1 Hot chili pepper (Your choice) diced fine
1½ c Zucchini, fresh and small diced
1 c Red onion, diced
2 T Olive oil
1½ t Cumin, ground
1 t Salt
Ground pepper
2 T Lemon juice, fresh squeezed
4 Garlic cloves, minced (use juice)
½ c Mexican oregano, dried
1/8 t Cayenne

Remove and discard the husks of the Tomatillas. Rinse them and dice them. Set aside in a bowl. Cut tomatoes in ½ crosswise and gently squeeze over the sink to remove the juice seed pockets. Cut out the stem end and dice the tomatoes into pieces. Add the tomatoes, sweet pepper, chili pepper, zucchini, cilantro - if used - and red onion to the bowl of Tomatillos.
In a separate bowl, whisk together the oil, lemon juice, garlic, oregano, cumin, salt and pepper. Pour over the vegetables and toss well. Serve immediately, but I have found that you can let the mixture set at room temperature for about 30 minutes to blend the flavors. You can also place the mixture in a quart jar and keep in the refrigerator. Have fun with it.

Recipe Name: Clam Fritters

Comments: Now this is an old recipe. Remember, the fritters should be thin and just golden brown.
Ingredients:
1 pt Clams
½ c Clam juice
2 c Flour
2 t Baking powder
½ t Salt
1/8 t Pepper

Chop the clams into small bits. Resreve the clam juice. Make a batter of the eggs, clam juice, flour, baking powder, salt and pepper. Stir in the clams and drop by spoonfuls into deep fat fryer at 360° - 370°F. Fry until golden brown

2 c Flour
2 t Baking powder
½ t Salt
1/8 t Pepper

Chop oysters into small buts. Make a batter of the eggs, milk, flour, baking powder, salt and pepper. Stir in the oysters. Drop by spoonfuls into deep fat fryer at 360° - 370°F. Fry until golden brown.

There are Mom´s appetizers. Some are familiar .... Some are not. I must note here and again that I never knew Mom to make a salsa, but I think she would have liked some of them. None of the salsas are particularly spicy - in fact, they are quite mild. Try them at your next affair and your guests will be amazed, if not fascinated. We really like the roasted salsas, but the zucchini mixed one is really good and surprising, as there is no cooking involved.
